ABOUT
Salvador Coffee, a specialty coffee shop that ran for eight years in Yamahana, Sapporo, was reborn in 2026 as “surume” in Nishi-Nakanobu, Shinagawa, Tokyo.
The name surume comes from a Japanese phrase — “surutto nomete, umee” (smooth to sip, and seriously good). Not coffee you drink with a furrowed brow, but a cup that slips easily into everyday life and makes you murmur, “so good.”

In 2018, I opened Salvador Coffee in Yamahana, Sapporo. Over eight years I grew it from nothing into a place loved by many, and in 2026 I chose Ebara-Nakanobu, Tokyo, as the stage for a new challenge.
Facing my weakness for early mornings, I brought in an espresso machine for the first time in eight years. As a serious specialty coffee shop you can drop by from early morning, surume settles into the daily life of this town.


We carefully select specialty coffee beans, valuing the differences in origin, processing and roast. Our roasting earned first place (Judges' Special Award) as Team Hokkaido at the Roast Masters Team Challenge 2023 — for a cup that's smooth to sip and seriously good, every day.

The owner's signature lemon cake balances sweetness with a crisp tang — the perfect partner to a bright, light-roast coffee. Enjoy a smooth, delicious break alongside the espresso machine we brought back after eight years.

Right by Ebara-Nakanobu Station on the Tokyu Ikegami Line. A downtown neighborhood with a surviving shopping street and the quiet rhythm of everyday life. surume sits right in the middle of it.
From the Gotanda terminal — served by the JR Yamanote and Toei Asakusa lines — it's a direct ride on the Tokyu Ikegami Line. Just a few stops straight to Ebara-Nakanobu, no transfers.
